Chilling Time: Several Hours This was my Dads kosher version of a shrimp cocktail. We loved it as kids and felt very grown -up whenever he made it for us. Hed serve it in traditional shrimp cocktail glasses. Very sophisticated! Place the onion in a saucepan with the water. Bring the water to a rolling boil and add the fish. Reduce heat to a high simmer and cook for about 10 minutes or until the fish is cooked through. Remove from the heat and drain. Discard the onion. Place the fish in a glass bowl and cover tightly. Refrigerate for about 3 hours or until well chilled. Cut the fish into chunks. Line a small plate or cocktail glass with lettuce leaves and place a few pieces of fish in the center. Cover with cocktail sauce or place the sauce on the sides. Add some carrots pieces cut into matchstick pieces and garnish with a lemon wedge. SAUCE: Mix the ketchup and horseradish.
