Instructions: In small skillet saute the onion, green pepper, and mushrooms in 1 tablespoon of butter over medium heat for 5 minutes or until mushrooms are tender.
In larger skillet over medium heat melt remaining butter. Add eggs, stirring eggs as they cook. When eggs have cooked 5 to 7 minutes add cheese and stir. Add sauteed onions, green pepper, and mushrooms along with dash of salt and cook until done. Divide eggs onto two plates. Sprinkle with the chopped tomato. Serve. This recipe yields 2 servings.
