Instructions: Wash watercress and cut off stems. Place watercress on large platter. Set aside.
Melt 2 tablespoons butter in large, heavy skillet over medium-high heat. Add garlic. Sprinkle steaks with pepper and add to butter. Saute about 3 to 4 minutes per side for medium-rare, or more to your liking. Remove steaks from heat and sprinkle with salt. Discard garlic. Serve atop platter of watercress. This recipe yields 4 servings. Comments: Steaks similar to these used to be served at Churchill Downs, home of the derby. Serve with warmed rolls. Email this Recipe:
