2 x Cornish hens, skin removed
2 tbl Water
1/4 cup Soy sauce
1/2 cup Red wine
1 tbl Sherry extract
1 tbl Dijon mustard
1/2 tsp Hot pepper sauce
2 tbl Vegetable oil
1/2 tsp Pepper
Instructions:
Instructions: Split hens in half down the back. Place in a shallow pan. Combine remaining ingredients, except bread crumbs and pour over hens.

Marinate several hours, turning occasionally. Preheat oven to 350. Sprinkle half of the bread crumbs over hens. Bake 30 minutes. Turn hens, sprinkle with remaining crumbs. Bake 30 minutes more.
