Ingredients:
Amount Ingredient
9 x Hard-boiled eggs, peel shell
3 x Scallions, finely chopped
1 x 12 oz can tuna, drained and flaked
1/2 tsp Dry mustard
3/4 cup Soy sauce
1 tbl Sesame or peanut oil
1/2 tsp Lemon juice
Salt and freshly ground black pepper
Instructions:
Instructions: Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl. Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture.

Sprinkle tops with paprika.

Note: Crab meat or abalone may be substituted for the tuna.
