1/4 cup Dijon mustard
2 tsp chopped fresh rosemary
OR
1/2 tsp dried rosemary leaves -- crushed
1 tsp coarsely ground pepper
2 x cloves garlic -- finely chopped
Instructions:
Instructions: Mix mustard, rosemary, pepper and garlic. Cover and let stand 30 minutes.

Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.

Spread mustard mixture on both sides of beef. Grill beef uncovered 4 to 5 inches from medium heat 1 minute on each side to seal in juices. Cover and grill 8 to 9 minutes longer for medium doneness (160 degrees F), turning once.

Yield: 4
