Ingredients:
Amount Ingredient
1 kg carrots, medium
1 tsp garlic, crushed
1 x onions, medium
1/2 cup olive oil
1/2 cup water
1 tbl white wine vinegar
2 tsp mustard powder
1/4 tsp cumin, ground
1/4 tsp paprika, sweet
1/10 tsp cayenne pepper
salt, pepper
2 tbl lemon juice
1 tsp sugar (caster)
Instructions:
Instructions: Peel and slice carrot into thin diagnal slices.

Dice onion.

Heat olive oil in a pan, add onion and garlic and cook gently until soft. Add carrots and continue to cook 2-3 minutes.

Add remaining ingredients, cover and simmer gently about 10 minutes until carrots are tender.

Allow to cool, heap into a salad bowl and sprinkle with chopped parsley.
