Instructions: Peel and slice carrot into thin diagnal slices.
Dice onion. Heat olive oil in a pan, add onion and garlic and cook gently until soft. Add carrots and continue to cook 2-3 minutes. Add remaining ingredients, cover and simmer gently about 10 minutes until carrots are tender. Allow to cool, heap into a salad bowl and sprinkle with chopped parsley. Email this Recipe:
