3 lrg leeks weighing about 450g trimmed and washed
3 tbl fruity olive oil
2 x doves garlic finely sliced
1 tsp cayenne pepper
1 tbl wholegrain mustard
75 gm mild soft goats cheese
1 x salt and freshly ground black pepper

wire shell on second set of runners in roasting oven

Hold the leeks upside down under running water to wash them this stops the grit going back into the leeks.

Heat the oil in a large frying pan on the floor of the roasting ovenwhile slicing the leeks very finely.

Add the leeks to the oil with the garlic and cayenne and cook covered on the ovenfloor for 12 to 15 minutes until well softened stirring once or twice.

Add the mustard and cheese to the leeks and stir until melted together then season to taste.

Just before serving pile the leek mixture nn to the toasts and cook on a baking sheet at the top of the roasting ovenfor 8 to 10 minutes until lightly browned and set.

Cut the crusts off the toasts or leave them on according to your own preference.

Piquant and delicious these unusual toasts stand alone as a nibble could be served with a salad garnish as a starter or may be cut into fingers and served as very special croutons with a soup.
