Ingredients:

1 x onions, medium
1/10 tsp black pepper, ground
1/2 x bayleaf
1/4 cup vinegar, white wine
1 cup white wine
1/2 tsp mustard, English
1 tsp worcestershire sauce
2 cup gravy mix
salt, pepper
Instructions:
Instructions: Place onions, peppercorns, bayleaf, white wine, vinegar, mustard and worcestershire in a pan, bring to the boil and reduce by half. Strain through a fine sieve and return liquid to pan.

Add the demi-glace or gravy and bring to the boil. Simmer for 5 minutes then remove from heat.

Add the butter in pieces and stir briskly to combine. (This process is called monte au buerre. ). DO NOT REBOIL.

Season and serve with grilled or roast meats.
