Ingredients:

1/4 cup fresh lemon juice
1/4 cup water
2 cup cilantro chopped and packed
1/4 cup fresh coconut -- chopped
1/4 cup onion -- finely chopped
2 tbl chopped gingerroot
2 tsp chopped fresh red chile
1 tsp sugar
1 tsp salt
Instructions:
Instructions: Combine lemon juice, water and 1/2 c. cilantro in blender and puree. Add remaining cilantro 1/2 c. at a time, reducing mixture to a puree each time. Add remaining ingredients and reduce mixture to a puree again. Serve immediately.

Makes about 2 cups

NOTES: Very fresh tasting.

This recipe is from a Polish woman I knew in Panama! She got it from a Hindu friend. Unlike the rest of the chutney recipes uploaded tonight, this one is fresh and not cooked
