Instructions: Mix avocado and salsa in a small bowl; set aside at room temperature.
Heat oven to 350 degrees. Line 2 cookie sheets with foil. Lightly coat both sides of tortillas with non-stick spray. Bake on prepared sheets 8-10 minutes or until crisp. Remove to dinner plates Meanwhile heat a large non-stick skillet over medium heat; add frozen pepper mixture and cook, stirring occasionally, 2 minutes or until thawed and soft. Drain. Wipe skillet with paper towel. Lightly coat with nonstick cooking spray and place over medium heat. Add beaten eggs and scramble until cooked through but not dry. Spoon eggs on tortillas; top with salsa, peppers and the toppings. Email this Recipe:
