Instructions: Add onion, garlic and olive oil to deep skillet or wok and cook over medium high heat until just translucent. Add tomatoes, rice, beans, corn and seasonings, stirring to coat. Add water and bring to boil. Reduce heat to low, cover and cook for 20 to 25 minutes. Serve sprinkled with shredded cheese and a garnish of sour cream and chopped black olives if desired.
