Instructions: Many Chinese dishes and snacks are dipped into a variety of dipping sauces before being eaten. The most popular of these are chilli sauce which can be bought readymade and Chilli Oil which can easily be made at home. soy sauce and red and black Chinese rice vinegars are also widely used as dips. The recipes on the following pages are some of my favourite dipping sauces most of which once made will keep for several months.
