Prepare vegetables by cutting on the diagonal and set aside. Cut the meat into 1/2" pieces and dip into a batter made from the egg and 2 Tbsp. cornstarch. Shake off excess and fry in hot oil until browned, removing to a bowl to add later. Reduce heat to med., add onions and garlic, cover and simmer for 5 minutes. Add the rest of the vegetables and stir fry on high heat for 3 minutes. Combine the sauce ingredients and stir into the vegetables. Cover and simmer on low for 7-10 minutes. Add the meat and pineapple, stirring to heat through. Serve over rice or chow mein noodles. (We prefer to make 1 1/2-2 times the sauce). Email this Recipe:
