Instructions: Peel tomatoes; dice and toss with salt. Place in a colander and let stand two hours. Meanwhile, mix other ingredients and refrigerate until ready. Serve over hot pasta of your choice. (Best type pasta for looks is penne or something similar.)
Makes 3 cups sauce. This is great served cold over the hot pasta, but it is also excellent served over fish or poultry. Email this Recipe:
