1.Testing Dough Consistency 2.Smooth, Satiny Ball 3.Dough That Will Rise Cant seem to find the right consistency? Is your dough not rising? How did your grandmother perfect that smooth, satiny ball that seems far away from your reach? Relax, youve come to the right section. TIP #1 Testing Dough Consistency Test by slapping your open hand against the ball of dough. If your hand comes away clean, the dough has enough flour. It should be smooth and satiny, not sticky. The combination of flour and kneading should be sufficient to let the dough stand on its own. TIP #2 Smooth, Satiny Ball For a supple, more elastic consistency, carefully measure the wet and dry ingredients. If dough appears too wet, add 1 tablespoon (15 mL) of flour at a time and knead to consistency. If dough appears too dry, add 1 tablespoon (15 mL) of liquid at a time and knead to consistency. TIP #3 Dough That Will Rise Substitute or decrease the amount of whole grain flours with finer grain flours to enhance the performance of the gluten.
