Instructions: Place peeled potatoes in a large pan, cover with water and boil for 20 minutes. Drain well and allow to dry. Place enough oil in a roasting pan to come halfway up on the potatoes when they are placed in the pan. Place the pan in a preheated 450 degree oven and allow to get very hot. Place the potatoes in the hot oil very carefully with a spoon. Roast the potatoes for 45 minutes, turning every 15 minutes until brown. Salt the potatoes when they are removed from the fat. The potatoes can be kept in a warm oven for a while after being removed from the oil.

NOTES : This is Bills specialty. While I have dinner baking in the oven upstairs, Bill bakes these in our nesco in the basement. They turn out soft on the inside and golden brown on the outside. Bill promised to love me in "sickness and health" on October 23, 1976. Little did he know at that time I would spend 6 weeks in the hospital and 4 months off from work following a craniotomy for a brain abscess in 1984. Before that time, he would nearly faint when he visited someone in the hospital. When I was hospitalized, he came daily and made me laugh and encouraged and delighted in my slow progress. His patience, love and devotion to me inspired me. I still remember him tenderly and jokingly rubbing my hair as it slowly returned. He has loved me unconditionally for 17 years-even when I fall off the pedestal. His nickname for me is "Stupid". Somehow that brings a lump to my throat. My mother sternly warned him not to call me that when I was sick. Maybe because it was true then.
