Roll greens in tight, cigar-shaped bundles. Slice bundles crosswise every 1/2 inch to shred greens. Heat water in large, deep skillet or soup pot. Add greens and eggplant: simmer, covered, until greens are wilted and eggplant is tender, about 15 minutes. Pan liquid ("pot liquor") should be nearly evaporated. Meanwhile, heat oil in saute pan over medium heat; cook garlic, onions and tomatoes until aromatic and tender, about 5 minutes. Stir tomato mixture into greens just before serving. Makes 10 servings.
