Instructions: Soak beans overnight in a large bowl and drain. Chop celery and cilantro.
Dice onion. Fry bacon; drain and let cool. Chop coarsely. Place beans in a 3-quart pot; add the celery, onion, cilantro and meat; pour the tomatoes and their juice over everything, and add pepper. Add water to cover beans and cook on a medium-low flame for 2 hours, until beans are tender and meat is falling off the bone. Add more water if necessary, Serves 6. Email this Recipe:
