Instructions: In a small saucepan, combine the apple juice, apricots, and ginger, and simmer over low heat for 5 minutes. Remove saucepan from the heat and set aside for 10 minutes to cool.
Transfer the apricot mixture to a blender or food processor. Add the remaining ingredients and blend until smooth. Transfer the mixture to an air-tight container and store in the refrigerator for up to 1 week. This recipe yields 1 cup. Yield: 1 cup Email this Recipe:
