Instructions: Lightly grate lemon or orange zest, being careful not to grate the bitter white pith. Using a homemade food dryer, lay grated zest on racks. You many need to cover the racks with cheesecloth to prevent zest from falling
through the slats in the racks. Dry zest according to food dryer manufacturers directions, or follow oven drying directions below. Zest should be crisp in 1 to 2 hours. Yield: 1 orange yields 2 teaspoons dried zest 1 lemon yields 1 teaspoon dried zest Variation Oven Drying: Dry with oven door slightly open and oven temperature at 145 degrees F. Use an oven thermometer to regulate the heat and keep it at 145 degrees. You will need to turn the trays if one area of the tray is drying more than the other. Zest will be crisp in 1 to 1 1/4 hours.
