Instructions: Dried red chillis are small thin and about 1cm long. They are used to season oil for stir fried dishes sauces and for braising. They are normally left whole or cut in half lengthways and the seeds left in. The Chinese like them to blacken and be left in the dish during cooking but as they are extremely hot and spicy you may choose to remove them after using them to flavour the cooking oil. They can be found in most supermarkets and in Chinese and Asian grocers and will keep indefinitely in a tightly covered jar.
