Neck and giblets from 1 duck
1/2 tsp salt
8 x black peppercorns
Water to cover
In a medium saucepan, combine all the ingredients and cover with water (about
1/2 cup ). Bring to a boil, reduce the heat to cook at a bare simmer and simmer
Instructions:
Instructions: Strain the mixture into a small saucepan, discarding the solids.

Reduce the liquid over medium heat until 1/2 cup remains, about 10 to 15 minutes.

Makes 1/2 cup.
