1 x 4-lb. duck
1 x tin pineapple slices
2 tbl oil
2 tbl soya sauce
1 tbl rum
1/2 cup water
2 tbl brown sugar
Instructions:
Instructions: Clean and roast the duck. Cool, remove bones and slice. Drain pineapple slices and dice. Place duck and pineapple in alternate layers in a casserole. Add the pineapple juice mixed with oil, soya sauce, rum, water, sugar and salt. Bake in moderate oven for 1 hour. Serve with rice and green salad.

Serves 4.
