Prick the duckling pieces all over with a sterilised darning needle or a fork. Rub salt into the skin so that it crisps well. Place the portions skin side up on a rack in a roasting dish. Cook in a preheated oven ( 180c/350f/gas4) for about 1 1/4 hours or until the meat is tender. Just before the end of the cooking time heat the honey orange rind and juice grapes and butter and bring the sauce to the boil. Transfer the duckling to an ovenproof dish pour over the sauce and return to the oven for 5 minutes. Serve hot garnished with the watercress.
