1 x egg, beaten
1/4 cup (60 ml) all-purpose flour
1/4 cup (60 ml) milk
1/2 tsp (2 ml) lemon juice
A pinch of salt
2 tbl (30 ml) butter
1/2 x apple, peeled and thinly sliced
Instructions:
Instructions: Beat together the egg, flour, milk, lemon juice, and salt until well combined but not completely smooth - there should be small lumps in it. Melt the butter in an 8-inch (20 cm) skillet over moderate heat.

Remove from the heat and pour in the batter. Quickly arrange the apple slices over the batter and bake in a preheated 425F (220C) oven until the pancake is golden and puffed up. Sprinkle with the sugar mixture and serve immediately.

Serves 1.

This version of the classic apple pancake also doubles as a one-dish breakfast for the solitary diner.
