Instructions: Preheat oven to 475 F. Place 1 tablespoon of the butter in each of six 4-inch ovenproof ramekins and heat in the oven until the butter is melted.
Meanwhile, in a blender or food processor, beat the eggs until light and frothy. Transfer the egg mixture to a large bowl and gradually beat in the milk, then the flour, until the batter is smooth. Stir in the almond extract and lemon peel. Pour approximately 2/3 cup batter into each ramekin of hot butter and bake for 12 minutes or until puffed and golden.
