Instructions: Saute apples in a small amount of butter until they soften. Mix flours, milk, egg whites and yolk, and baking soda. Add enough water to make desired batter consistency. Mix in sauteed apples and sliced bananas. Cook on a preheated griddle or skillet until done on one side, then flip to cook other side.
Makes 10 to 12 pancakes. NOTES : This dish is a favorite of cowboy actor Don Murray, who starred as gunman Earl Corey in the 1969 TV western The Outcasts. Murray contributed the recipe to the new All-American Cowboy Cookbook, by Ken Beck and Jim Clark (Rutledge Hill Press). Email this Recipe:
