1 tbl margarine
1/4 cup finely-chopped onion
2 x garlic cloves minced
1 tbl all-purpose flour
3/4 cup reduced-fat (2%) milk
2 cup shredded mild or sharp Cheddar cheese (8 oz)
1 pkt cream cheese - (3 oz) cut into cubes
1/2 cup crumbled blue cheese - (2 oz)
1/8 tsp ground red pepper
4 dsh hot pepper sauce - (to 6)
Instructions:
Instructions: Heat margarine in small saucepan over medium heat until melted. Add onion and garlic; cook and stir 2 to 3 minutes or until tender. Stir in flour; cook 2 minutes, stirring constantly.

Stir milk into saucepan; bring to a boil. Boil, stirring constantly, about 1 minute or until thickened. Reduce heat to low; add cheeses, stirring until melted. Stir in red pepper and pepper sauce. Pour fondue into serving dish. Serve with dippers.

This recipe yields 8 (3-tablespoon) servings.

Hint: For a special touch, sprinkle fondue with parsley and ground red pepper.

Lighten Up: To reduce the total fat, replace the Cheddar cheese and cream cheese with reduced-fat Cheddar and cream cheeses.
