Instructions: Cut the meat into practical sized cubes removing any skin and bone.
Chop the spring onions keeping the white and green part in separate piles. Peel stone and slice the avocados and mangoes diagonally slice the peeled bananas and toss all the fruit in the juice of the lemons. All these want to he in fairly chunky pieces. Melt the butter in a pan on the boiling plate and fry the white part of the spring onions until tender. Add the curry powder allow to cook for a few minutes and then mix with the mayonnaise and the chutney in a large bowl. Mix all the fruits lemon juice and chicken or turkey with the mayonnaise mixture and check the seasoning. Add the green part of the spring onion and pile into a shallow ovenproof dish about 300 x 380mm. Sprinkle with paprika. Just before serving bake in the centre of the roasting oven for about 12 to 15 minutes watching carefully until piping hot. Do not allow to overcook or the mayonnaise will separate. Serve with rice and a green salad. A great hot party dish and very easy. If you like a really spicy flavour add an extra teaspoon of curry powder.
