1 x Garlic clove minced
1 pkt Boboli shells (8 oz - 2 shells)
1 x Italian Caponata see * Note
Bibb lettuce (optional)
1 x Herbed Goat Cheese see * Note
6 x Fresh figs cut into wedges
----------------- ASSORTED FRUITS AND VEGETABLES ----------------
Pear-shaped yellow tomatoes
Pear-shaped red tomatoes
Tomato wedges
Pickled baby corn
Pickled peppers
Seedless grapes
Instructions:
Instructions: Combine olive oil and garlic. Place bread shells on a baking sheet and brush with oil mixture. Bake in a 400 degree oven 10 to 15 minutes or until golden. Cut bread shells into wedges; set aside.

Spoon Italian Caponata into a small bowl and place on a large serving platter. Line the rest of the platter with lettuce. Arrange Herbed Goat Cheese, figs and desired fruits and vegetables on the platter. Serve with bread wedges.
