1/2 cup all-purpose flour
1/2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1 cup light brown sugar - (packed)
1/2 cup granulated sugar
1/4 cup butter or margarine softened
1 cup unsweetened applesauce
1 whl egg
2 x egg whites
1 tsp vanilla extract
3 cup uncooked old-fashioned oats
Instructions:
Instructions: Preheat oven to 350 degrees. Line a 9- by 13-inch baking pan with aluminum foil and coat with nonstick cooking spray.

In a small bowl, whisk together flour, cinnamon, baking soda, and salt.

In a medium bowl, with an electric mixer on medium speed, beat brown sugar, granulated sugar, and butter until blended. Beat in applesauce, egg, egg whites, and vanilla. With a spoon, stir in the flour mixture until blended. Gently stir in oats and blueberries. Spread evenly in the pan.

Bake 30 to 35 minutes or until lightly browned around edges and a wooden toothpick inserted in the center comes out clean. Transfer pan to a wire rack to cool completely. Lift by foil from pan and cut into 24 bars.

This recipe yields 24 bars.

Comments: If you prefer, substitute an equal amount of fresh pitted, chopped cherries for the blueberries.
