1 x 8" graham-cracker pie shell
read-to-fill
1 cup plain pumpkin
cooked or canned
1/2 cup low-fat cottage cheese
creamed large-curd
3 x eggs
1 tbl rum flavoring
or vanilla extract
1/2 tsp pumpkin-pie spice
1 pch salt
5 tbl brown sugar
brown or white sugar
substitute to equal to 4
Instructions:
Instructions: Unwrap pie shell. Combine remaining ingredients in blender; cover and blend on high speed until very smooth. Pour into pie shell. Bake in a preheated 275 oven 1 hour or more, until filling is set. Chill several hours before serving.
