Instructions: Preheat oven to 350 degrees. In a 9 inch square pan, mix together flour, sugar, baking soda, cinnamon and salt. Add carrots, oil, eggs and vanilla. Mix with a fork until thoroughly blended. Stir in pineapple, coconut and walnuts.
Bake 40 to 45 minutes, or until pick inserted in center comes out clean. Place the pan on a rack to cool. Frost. To make frosting: Beat cream cheese, butter and vanilla until well-blended. Add sugar and beat until smooth. Email this Recipe:
