1/2 oz ready-to-serve vegetable broth (1 can)
8 oz uncooked rosamarina (orzo pasta) (1-1/4 cups)
1/2 oz canned diced tomatoes undrained
with basil, garlic and oregano
15 oz canned black beans rinsed and drained
2 cup frozen broccoli cauliflower and carrots (from 16 oz. bag)
2 tbl chopped fresh parsley if desired
Instructions:
Instructions: Heat broth to boiling in 10-inch skillet. Stir in pasta. Heat to boiling; reduce heat to low. cover and simmer 10 to 12 minutes or until liquid is absorbed.

Stir in tomatoes, beans and vegetables. Cover and cook over medium heat 5 to 10 minutes, stirring occasionally, until vegetables are tender.

Stir in parsley. Sprinkle with cheese.

Nutritional Values = 5 Points. Diet Exchanges: 4 Grain(Starch); 1/2 Lean Meat; 1 1/2 Vegetable; 1/2 Fat. Substitition: This is the perfect dish for kids to make for the family supper. It is easy and requires no chopping or cutting, if the parsley is omitted. If you like, try another cheese, such as Romano, mozzarella, fontina or even Asiago.

For Meat Version: (Easy Italian Turkey Sausage Skillet Supper) add 1/2 pound fully cooked smoked turkey sausage, cut into 1/4" sliced with the vegetables in step 2. Continue as directed.
