Ingredients:
Amount Ingredient
1 lb lentils
2 cup vegetable stock
2 tbl coriander seeds
2 tbl cumin seeds
1 tsp dried oregano
1 tsp dried basil
2 x bay leaves
3 sm red potatoes - (to 4) diced
1 lb fresh spinach thoroughly rinsed,
and chopped
3 cup peeled diced butternut squash
1 tbl olive oil
1 lrg onion chopped
1 x celery stalk chopped
1 x carrot peeled, sliced thin
4 x garlic cloves crushed
Salt to taste
Instructions:
Instructions: Place all the ingredients in a large pot and bring to a boil. Lower the heat to a simmer and cook, covered, about 45 to 50 minutes. Remove the bay leaves before serving.

This recipe yields 3 to 4 servings.
