Instructions: Boil the potato. Drain well and mash thoroughly. Mix in a small amount of vanilla. Add small amounts of confectioners sugar until the mixture forms a rollable dough. Roll out on wax paper covered in confectioners sugar.

Spread peanut butter over the top of the dough.
