Instructions: Cut imitation crab into bite-size or smaller pieces. Dice celery into pieces (the size you are accustomed to using in potato or macaroni salad); mix with crabmeat. Stir in salad dressing or mayo (whichever you prefer).
To assemble: Lightly cover a tortilla with additional salad dressing or mayo to within about 1 inch of edges. Put a layer of lettuce in a wide line down the center of the tortilla. Put 3-4 tablespoonfuls of salad on top of lettuce. Fold in about 1 to 1-1/2 inches on the sides of the tortilla at the ends of the lettuce/salad line. Holding these in place, fold over one side of the tortilla across the salad and roll the tortilla closed. Makes 4-6 tortillas, depending on how full you want them. Leftover tortillas can be used with another batch of filling or other fillings of your choice. Email this Recipe:
