Instructions: Heat oil in nonstick skillet. Add potatoes and sausage; cook 5 minutes or until potatoes are browned, stirring occasionally.
Mix eggs, milk and mustard in small bowl; pour evenly over potatoes and sausage. Cover. Reduce heat to low. Cook 8 minutes or until eggs are set. Sprinkle with cheese; cover. Heat until cheese melts. Cut into wedges. This recipe yields 6 servings. Email this Recipe:
