Instructions: In large mixing bowl, combine the spaghetti and sauteed vegetables (peas, carrots, mushrooms, spinach, peppers, etc.) Add the cheeses and spices.
Mix in the beaten eggs. Pour the mixture into a hot oiled skillet. Cook omelet style for about 10 minutes at medium heat. The bottom of the mixture should be well browned. Use a dinner plate to flip the "pie" and return to the hot skillet to cook the second side for about 4 more minutes. Transfer to a serving platter and slice like a pie.
