Instructions: Preheat oven to 350 F. Spray pan with cooking spray. Mix potatoes and onion together. Place in casserole dish or baking pan and spread out evenly to cover dish. Sprinkle with shredded cheese.

Place in 350 F oven and bake for about 30 minutes.

* enough = however much you think you need to serve the folks youre cooking for.

NOTES : A great way to use up leftover mashed potatoes. This is very yummy !
