Instructions: Fresh fruit, such as berries, kiwifruit or passionfruit
Preheat oven to 375 degrees. Line a cookie sheet with parchment paper. Place the egg whites, sugar, vanilla, vinegar, cornstarch and water in the small bowl of an electric mixer and beat on high speed until mixture is very stiff, about 15 minutes. (The stiffer the mix, the better the results.) Spread in a 4- to 5 inch circle on prepared cookie sheet. Bake 10 minutes, then reduce heat to 300 degrees and bake 45 minutes more. Let cool in oven. (It is important to let the dish cool in the oven). To assemble, spread a generous layer of sweetened whipped cream over the top of the pavlova, and top with fresh fruit. Email this Recipe:
