Instructions: Evenly coat 8- x 8 inch baking pan with cooking spray. Set aside. In medium bowl, stir together flour, sugar, baking soda and cinnamon until evenly combined. Using pastry blender or two knives with scissor action, cut in butter until mixture resembles coarse cornmeal. In small bowl, lightly beat egg. Beat in buttermilk and vanilla. Slowly add buttermilk mixture to flour mixture, stirring constantly until well combined. Spoon half of batter into prepared skillet. Dollop with preserves. Spoon on remaining batter. With knife or spoon, gently swirl. Sprinkle with walnuts. Bake in preheated 350 F oven until golden brown and cake tester comes out clean, 30 to 35 minutes for pan. Cut into squares to serve.
