5 lb whole chicken cut up
4 tbl cider vinegar
4 tbl salt
Oil for frying

3 cup flour
2 tsp salt
3 tsp seasoned salt (such as Lawrys)
1 tsp black pepper
1/2 tsp poultry seasoning
2 tsp paprika
Instructions:
Instructions: Rinse chicken pieces under cold running tap water twice. Place chicken in a big bowl in the sink and cover with water. Add vinegar and salt and soak for 30 minutes (see Notes). Drain well.

Preheat oil in a deep fat fryer to 350 degrees.

Coating: In a shallow dish, mix together flour, salt, seasoned salt, black pepper, poultry seasoning, paprika and garlic salt.

Dredge chicken in flour mixture, shaking off excess flour.

Drop floured chicken in hot oil and cook for 15 minutes (see Notes). Separate pieces occasionally with metal tongs. When brown and crisp, remove chicken and drain well on paper towels before serving.

Notes: To exercise caution, place bowl in refrigerator while chicken soaks. If you dont have a deep fryer, you can use a frying pan; add oil and cook the chicken for about 10 minutes on each side.

Makes 10 servings.
