Instructions: In a mixing bowl, beat the 2 eggs well and add the lemon juice. Beat the mixture again and blend very slowly into the soup so as not to curdle the eggs.

NOTE: This is similar to the Chinese egg flower soup method, only the Chinese let the eggs curdle as it is incorporated into the soup
