4 x Fatfree or lowfat flour tortillas, 8-inch diameter
8 lrg Eggs
1/4 cup Sliced scallions
1 tbl Dijon mustard
1/2 tsp Salt
1/4 tsp Pepper
2 tsp Butter or margarine
Instructions:
Instructions: Heat tortillas as directed on package. Meanwhile, whisk eggs, scallions, mustard, salt and pepper in a large bowl until blended. Melt butter in a large nonstick skillet over medium-high heat. Add bacon and cook 2 minutes, stirring occasionally, until golden in spots. Add egg mixture and cook, stirring often, until set.

Place 1/4 of the egg mixture in the middle of each tortilla. Fold 1 end of tortilla about 1 inch over egg mixture. Fold right and left sides over folded end.
