Ingredients:

4 slc bacon
2 tsp parsley, chopped
5 x eggs
1/2 cup milk
salt, pepper
Instructions:
Instructions: Preheat oven to 200C/390F.
Mix 1 egg with the mik and set aside.

Roll out 2/3 pastry and line a tart or pie dish.

Cut bacon into strips and line bottom and sides with 2/3 of the bacon. Break eggs on top, cut each egg yolk with a knife then pour over milk/egg mixture. Season well and sprinkle with chopped parsley. Cover with remainder of bacon strips.

Roll out remaining pastry and cover pie. Trim and seal the edges, make a slit in the top and brush with eggwash.

Bake for 30 minutes until pastry is golden brown. Turn off oven and allow to sit 10 minutes in oven before serving.
