Ingredients:
Amount Ingredient
1/2 cup olive oil
1 x eggplant (about 1 pound peeled and cut into 1/2-inch cubes
3 cup vegetables cut in 1/2" cubes such as onions, green peppers zucchini, celery
2 x cloves garlic minced
1 can solid pack tomatoes (28 oz.) drained
1/3 cup red wine vinegar
2 tbl sugar
2 tbl capers (optional)
2 tbl tomato paste
Salt to taste
1/2 cup chopped parsley
1/2 cup large manzanillo olives rinsed and thickly sliced
2 tsp crumbled dry basil
Instructions:
Instructions: In a large, heavy saucepan, combine the first 5 ingredients and cook for about 30 minutes. Add the rest of the ingredients except nuts, cover and simmer for 15 minutes. Add nuts and serve warm, not hot, at room temperature.

Serves 10 to 12.
