Instructions: Wash eggplants and remove stems. Cut into 3/8-inch slices, lengthwise for the small ones, crosswise for the medium one. Heat sesame oil in skillet and fry eggplant until golden brown.
Mix beef with Seasoning Mixture ingredients and brown both sides on ungreased skillet. Sandwich the beef between 2 slices of eggplant. Serve with the Vinegar-Soy Sauce. This recipe yields 4 servings.
