2 tbl Olive Oil
1 x Onion, chopped finely
1 x clove Garlic, chopped finely
500 gm (or 1 lb.) Beef, cubed
3 med Potatoes, cubed
1 med Eggplant, cubed
1 cup crushed fresh Tomatoes OR
1 x tin of peeled Tomatoes, crushed
Salt and Black Pepper to taste
5 x -6 cups Water
Instructions:
Instructions: Warm the olive oil over medium heat in a 3-quart pot. Add the onion and garlic, and saute until onion is soft. Add the beef, stirring until browned.

Add the potatoes and eggplant, and stir for a few minutes more. Add the tomatoes, salt, pepper, and the water, and stir to mix through. After bringing to a boil, reduce the heat to simmer for about 20 to 30 minutes or until everything is cooked through. Serve warm with croutons.
